Lamb and Aleppo Butter Fill Aubergines; Berry Ice Cream Makes Waves

by admin477351

A delectable culinary experience awaits with a menu that features spiced lamb-stuffed aubergines topped with Aleppo chilli butter, paired with a creamy berry-ripple tahini ice cream for dessert. The savory dish highlights tender roasted aubergines filled with a flavorful mix of lamb, tomatoes, and herbs, while the dessert offers a refreshing combination of tangy berries and nutty tahini, resulting in a perfect harmony of flavors.

The preparation for the spiced lamb-stuffed aubergines begins with halving and scoring five medium aubergines, which are then salted and set aside for 20 minutes. Following a quick pat dry, they are roasted with olive oil in a preheated oven at 220C/200C fan/gas 7 for about 30 minutes. The lamb filling involves cooking 400g of lamb mince with finely chopped onions, garlic, and green pepper, seasoned with cumin, cinnamon, and Aleppo chilli. Chopped cherry tomatoes and pepper paste enrich the mixture, which is cooked until reduced and flavorful. This savory filling is then spooned over the roasted aubergines, baked further with a tomato and water mixture, and finished with a drizzle of spicy Aleppo chilli butter and a sprinkle of parsley. Greek yogurt serves as a cool, creamy accompaniment to this hearty dish.

For dessert, the berry-ripple tahini ice cream is a no-churn delight that requires minimal preparation time. Mixed berries are gently stewed with honey to release their juices, forming a berry sauce that cools while the tahini, vanilla essence, condensed milk, and Greek yogurt are combined. This mixture is folded into whipped double cream to form the ice cream base. Half of this base is layered with the cooled berry sauce in a freezer-safe container, swirled to create a ripple effect, and topped with the remaining mixtures. After freezing for at least four hours, the ice cream is ready to be served with biscuits and optional toasted sesame seeds.

This menu not only satisfies with its rich and balanced flavors but also offers flexibility in serving. The aubergines can be paired with warm bulgur, rice, or flatbreads, and complemented by a simple parsley-and-onion salad for a complete meal. Meanwhile, the ice cream, with its smooth and nutty undertones, provides a refreshing contrast and a sweet ending to the feast. This combination of dishes promises a delightful dining experience, blending savory warmth with cool, fruity sweetness.
